1 lb bok choy
2 tbsp olive oil
3 cloves garlic, minced
2 inches fresh ginger, peeled and minced
1 tbsp soy sauce
1 tsp sesame oil
1/2 tsp sugar (optional, to balance the flavors)
Salt and pepper, to taste
1/2 tsp red pepper flakes (optional, for a bit of heat)
Sesame seeds for garnish
Prepare the Bok Choy:
Rinse the bok choy under cold water, removing any dirt.
Trim off the bottoms and then cut the larger leaves in half lengthwise. Leave the smaller leaves whole.
Sauté Garlic and Ginger:
Heat olive oil in a large skillet or wok over medium heat.
Add the minced garlic and ginger. Sauté for about 1-2 minutes until they are fragrant but not browned.
Cook the Bok Choy:
Add the bok choy to the skillet. Stir and toss for about 3-4 minutes. The leaves should start to wilt and the stalks will become tender but should still retain some crunch.
Season with salt and pepper to taste.
Add Flavorings:
Drizzle the soy sauce and sesame oil over the bok choy. If using, sprinkle sugar and red pepper flakes. Toss everything together to coat the bok choy evenly.
Cook for an additional minute.
Serve:
Remove from heat. Garnish with sesame seeds.
Serve immediately as a side dish with your Honey Garlic Glazed Cod.
This ginger bok choy recipe is quick and easy, making it a perfect side dish for a busy night. The bold flavor of ginger will contrast nicely with honey garlic glazed salmon or cod, and the simplicity of the greens will balance the richness of the main course.
